달고나 생크림은 대박입니다.!!!
추억의 달고나… 라기엔 아직도 너무 인기 많은 길거리 과자 이네요.
지금은 달고나가 대명사 처럼 되었지만, 저 어릴때는 뽑기라고 불렸어요. 지역마다 부르는 이름이 달랐더라고요. ㅎㅎㅎ
어쨌거나.. 어느날 제게 달고나를 가지고 케이크를 만들라는 특명?이 떨어졌어요.
달고나로 어찌…만들까… 처음에는 부수어서 장식이나 할까? 하지만 장식만 하기엔 좀 약하다는 생각이 들었어요.
그래서 달고나를 가루내어 생크림에 넣어 휘핑을 해보았지요. 결과는 정말 대박 입니다. 진짜 한번 만들어 보세요. 진짜로!! 맛있어요. 음하하하..
달고나 가루양은 기본 생크림 휘핑 할때 넣는 설탕 양보다 많이 넣어야 합니다.
저는 이번에 생크림양 대비 11.5%를 넣었습니다.
달고나 맛이 좋으시면 가루를 12~13% 까지 넣으면 더 진하고 좋습니다.
대신 설탕을 많이 줄인 얼그레이 제누아즈 시트를 사용하여 단맛의 벨런스를 맞추려고 노력했어요.
그리고 얼그레이 없이 설탕만 줄여서 만든 기본 제누아즈도 아주 좋습니다. 달고나 맛을 더 표현 할 수 있지요.
기본 제누아즈는 아래 얼그레이 시트에서 얼그레이 대신 박력분 90g 으로만 사용하세요.
달고나에 왁스 도장을 콕 찍어서 데코를 햐였습니다.
그런데 단점이 있다면 달고나 만들기가 좀 힘들었어요.
달고나 레시피중 물을 넣어 캬라멜을 만들고 거기에 소다를 넣는 레시피가 있지요.
물론 성공률은 높은 편이에요. 하지만 그것은 오리지날 달고나 맛과 달랐어요.
단지 설탕맛만 나요. 이 케이크를 위한것은 설탕만 바로 녹여낸 방법이 더 맛있어요.
뭐랄까.. 불맛? 스모크향 이랄까요? ㅎㅎ.
달고나를 만들때는 반드시 얇은 국자를 사용하세요. 빨리 달아오르고 빨리 식어야 합니다.
그래야 타지 않고 성공적으로 만들 수 있어요. 왜 여러분의 국자가 무참히 탔었는지 짐작이 가시죠?
그리고 소다는 설탕이 녹자마자 약간 넣고 마구 젓다가… 연기가 살짝 오를때 두번째로 약간 더 많은양을 넣으세요.
그 연기가 많이 났다면 이미 망쳤구나 생각하시면 맞습니다. ^^
그리고 소다 넣음과 동시에 미친듯이 저어 주는것 잊지마세요. 그래야 풍성하고 고운 달고나가 나옵니다.
또 하나 달고나는 수분에 약합니다.
만일 만드신다면 달고나 데코는 최대한 마지막에 만들어 장식을 하세요.
또는 제 장식은 참고만 하시고요… 생크림만 만들어도 넘 맛있어요.
미리 생각했었다면..데코장식을 설탕시럽에 코팅을 했을텐데요.. 좀 아쉽습니다.

설탕 1.5 Tbsp (20g)
베이킹 소다 약간
5~6번 만들어야 해요.
★ 달고나 생크림
달고나 가루 46g(49~52g 까지 하면 더 맛있어요. 달고나 가루양은 46g 이하로 줄이지 마세요. )
생크림 400g
★ 달고나 시럽
달고나 가루 15g
물 60g
★ 얼그레이 제누와즈
계란흰자 90g
설탕 70g
계란노른자 3개 (50~55g)
우유 30g
식용유 24g
박력분 87g
얼그레이가루 3g
제누아즈 레시피는 여기 알려드린 대로 해야 하고요.
또는 그냥 얼그레이 없이 박력분 90g로만 플레인한 기본 시트로 해도 좋습니다.

Dalgona is a Koreanstyle caramel candy.
This is the street snack. Sweet, fun and loved by children.
The taste is like smoky caramel since it is made without water.
You will gonna love it too.
You should use a thin ladle that heats up easily and cools down fast.
Work on very low heat. Otherwise, it’s easy to be scorched.
Unfortunately, Dalgona has many air bubbles inside so that it is weak for moisture.
My Stamp Dalgona on this cake is melting very slowly. I just showed you it as a possible example.
★ Dalgona (Korean caramel candy)
Sugar 1.5 Tbsp (20 g)
A little bit of baking soda
You have to make it five or six times.
★ Dalgona whipped cream
46 g Dalgona powder (or to 49~52g for more rich flavor)
400g heavy cream
★ Dalgona syrup
15g Dalgona powder
60g water
★ Earl Grey sponge
90g Egg White
70g sugar
3 egg yolks (50 ~ 55g)
30g milk
24g Vegetable Oil
87g Cake flour ( or 90g cake flour without earl grey powder )
3g Earl Grey Powder
